#EssentialRecipe => Miso Sauce

I absolutely love Miso Sauce, but with the quantities that I eat, I find it a bit expensive to buy not to mention the chemicals and preservatives usually added. So I created my own recipe below. Since I make my own vegetable broth with left over vegetables (recipe coming soon) the flavor of this gravy changes all the time, but if you stick with your favorite brand, you will have a consistent taste every time you make it.

Ingredients:

-4 Tbsp miso

-4 Tbsp warm water or cashew milk

-2 Tbsp avocado oil

-1/4 Cup almond flour or regular flour

-3 Cups vegetable broth

-1 Tbsp soy sauce

-1 Tbsp nutritional yeast

-1/4 tsp black pepper

-1 tsp arrow root dissolved in 2 Tbsp water or cashew milk

-Sea salt

Method:

Whisk the miso and water until completely dissolved.

Heat the avocado oil in a large pot on medium low heat.

Add the flour while whisking continually until a thick past forms.

Add the miso mixture slowly while continuing to whisk followed by the vegetable broth, soy sauce, nutritional yeast and black pepper.

Stir very well to combine.

Bring to a boil then lower to medium low until you reach the thickness desired. Stirring frequently.

Add the arrowroot and water mixture to thickened if necessary.

Add sea salt to taste.

*Feel free to increase to quantities of Miso paste if you really enjoy the taste.

Voila! Homemade miso sauce.
